This is honestly the BEST granola I have ever had !!! After watching an inspiring interview with a nutritionist, she mentioned in short, if you can’t say it, don’t eat it !! She was referring to all chemicals, excess sugar, and preservatives in our food. My guilty pleasure is granola, and granola bars specifically. In my head, I guess I had thought that granola is better than cookies, and granola bars use the ‘healthiest’ cereal. WRONG !! After reading the box of my favorite peanut butter granola bars, the conclusion is … packed with crap!! So I made my own !!!
Thank you to YouTube for the multitude of fabulous organic videos, Trader Joe’s for their chopped and pkgd nuts and Sprouts for the bulk products. Easy and fun to make.. and I was able to make mine less sweet, and added pumpkin seeds…. So tasty !!
Combine in a bowl
- 2 ½ cup rolled organic oats
- 1 cup of shredded unsweetened coconut
- ½ cup chopped almonds
- ½ cup chopped walnuts
- ½ chopped pecans
- 1/3 cup unsalted sunflower seeds
- 1/3 raw unsalted pumpkin seeds
- ½ cup flax meal
- ¼ cup sesame seeds
- ¼ cup chia seeds
In a sauce pan over low heat
- ¾ cup of organic honey
- ½ cup organic almond butter
- ½ cup coconut oil
Pour warm mixture into bowl with dry ingredients, mix thoroughly
Spread onto cookie sheet one layer thick
Bake in oven @ 315 degrees for 20 minutes or until brown.
Put back into bowl and add dried fruit
½ cup cranberry
½ cup blueberries
